Roasted Garlic & Butternut Squash Risotto

      I love a good risotto and this Roasted Squash and Garlic variation was delicious! I opted for Butternut instead of the Kabocha squash because I already had it on hand and I think it worked just as well. When I originally searched for a risotto recipe to try one site alone yielded over 400 recipes! This one was great but now my eyes has seen so many options and I've got to decide which one to try next. Chanterelle Mushrooms? Gorgonzola and Radicchio? Smoked Gouda and Spinach? So many variations, I have a feeling I will be back to share more risotto soon blogland!

Sweet Potato Pancakes and Pumpkin Pie Spiced Applesauce

   Last week I had a random craving for fall pumpkin pancakes but being its summer there is of course no pumpkin to be found in the house. Feeling too lazy(I blame summer!) to run out for pumpkin I decided to try and make it work with a substitue tub of leftover mashed sweet potatoes. I made a batter with a basic pancake mix and simply added the left over mash. The pancakes were tasty, not the same as pumpkin pancakes but definitely filled the craving. And, since Im not a fan of syrup(gasp, I know, I'm weird)I topped them with the Pumpkin Spice Applesauce I made the day before. 

   The applesauce is the easiest thing I've made in a long time. I ran a pile of apples through my old apple peeler, threw them into the slow-cooker, added a splash of water and a spoon of pumpkin pie spice, and let it cook all day.  In the end your left with the tastiest fall spiced applesauce ever!

   I realize this was a breakfast more suited for Fall and maybe I'm getting ahead of the summer but I'm blaming all this East Coast summer rain for mixing up my seasonal kitchen cravings. Am I the only one thats mixed up by this weather? Whats your favorite thing to eat out of season?

Goodbye Google Reader

Sweet Potato & Ham Biscuits

   As I mentioned before, we had some awesome neighbors while camping in North Carolina. They had great local advice and they also shared an awesome "Carolina Secret" (as they called it) Sweet Potato Biscuits.  I've never had anything like them before but I was an instant fan. They were super dense but still delicate, sweet but salty, and above all: incredibly addictive! Actually, before we even left I was scouring the internet for recipes to try as soon as I got home.

   This last week I had a chance to try some of those recipes  but none of them really came close to the ones we ate in NC(boo!). But, in the mean time, I thought I'd still style and shoot them for the practice. I've learned (quite quickly) I'm going to have to give myself assignments to keep shooting daily. So while these were still delicious and made for decent photo subjects they just were not the same as the real NC thing. So I'm still on the hunt for the perfect recipe and once I find one that comes close I promise I will share it here.
